Asparagus & Gruyère Tart

Created for our most recent photoshoot, this simple, elegant tart celebrates the freshness of the season. Light, effortless, and quietly beautiful, it’s the kind of dish that feels at home at a long, relaxed table or wrapped up and taken along for a picnic in the sun.

With its delicate balance of flavours and unfussy preparation, it’s a recipe we return to time and time again, perfect for sharing with friends or enjoying slowly on a warm afternoon.

THE INGREDIENTS

Serves 6-8 slices

1 sheet ready-rolled puff pastry

Dijon mustard (optional)

175–200g Gruyère cheese, grated

50g Parmesan, grated

250g asparagus, trimmed

Zest of 1 lemon

A few sprigs of fresh thyme

Method

Preheat the oven to 200°C.

Unroll the puff pastry onto a baking sheet, keeping it on its original baking paper. Using a fork, prick the centre all over, leaving a 2–3cm border around the edges to form a crust. This will help the middle stay flat while the edges puff up beautifully.

If using, spread a thin layer of Dijon mustard over the base to add depth of flavour.

Scatter over the grated Gruyère, then arrange the asparagus on top, neatly aligned or in a loose pattern depending on your mood. Finish with a sprinkling of Parmesan.

Bake for 20–25 minutes, until the pastry is golden and crisp and the cheese is bubbling.

Serve warm or at room temperature, finished with a scattering of lemon zest and fresh thyme leaves. A dish made for the table, to be shared with guests over a relaxed seasonal gathering.
